Smoked Scalloped Potatoes
Ingredients
6-8 golden potatoes
2 sticks of butter
vegetable oil
salt
pepper
garlic salt
4 cloves of garlic
1 onion
Directions
Start BBQ pit, make sure your fire is very hot and all coals are burning red. While you're waiting for your fire to heat up, scallop your potatoes and place them on two sheets of heavy duty cooking foil. Pour 2 table spoons of vegetable oil over the potatoes, along with your seasoning's (as desired). Slice your onion and garlic cloves and place them in the foil with the potatoes and seasonings. Stir all ingredient's together using your hands (it's the easiest way). Once all your ingredients are mixed together, place the 2 stick of butter on top of the potatoes and close the foil. Place the potatoes to the side of the fire, you do not want them to be directly on the fire because they may burn. Cook for 1 hour and 45 min, let cool, then enjoy!!
